This format includes:

Training program:

Pre-opening phase:

To ensure you serve perfect pizzas from day one, your pizza makers can be trained at our facility in Bali or in one of our partner restaurants already in operation.

They will learn essential skills including hand-stretching the dough, topping, handling the pizza with peels, and baking in professional ovens.

Start-up phase:

During the first weeks of operation, one of our trainers will be on-site to support your team until they can work independently and confidently.

Ongoing support:

Throughout the entire service period, we provide continuous training, refresher courses, and quality monitoring to ensure consistent standards and production processes.

Maintenance:

Free maintenance and repair of all supplied equipment for the full duration of the service.

Dough features:

Our dough is specifically developed to produce authentic Italian pizza in high-performance ovens.

– Prepared according to traditional Italian methods

– Slow fermentation process (36–48 hours)

– High-protein flour blend (W250, >16% protein, ash <1%)

– Hydration: 65%

– Processed using slow mixers specifically designed for pizza

– Made with natural yeast and sourdough starter

– Long fermentation in temperature-controlled proofers (36–48 hours)

– Average baking time: 90–120 seconds

– Best used within 48 hours from delivery
